- Preheat the air fryer to 400°F (200°C).
- Wash and scrub the beets thoroughly. Trim the tops and roots, then peel them.
- Cut the beets into uniform 1-inch cubes.
- In a bowl, toss the beet cubes with olive oil, salt, and pepper until evenly coated.
- Place the beets in the air fryer basket in a single layer.
- Cook for 25 minutes, shaking the basket halfway through for even cooking.
- Once cooked, remove the beets and drizzle with balsamic vinegar if desired.
Notes
For easier peeling, you can microwave the whole beets for 3-4 minutes before peeling them. This dish pairs wonderfully with a fresh salad or as a colorful side to your main course.
