Ingredients
  

Beets
  • 4 medium beets
  • 1 cucchiaio olive oil
  • ½ cucchiaino salt
  • ½ cucchiaino black pepper
  • 1 cucchiaino balsamic vinegar (optional)

Method
 

  1. Preheat the air fryer to 400°F (200°C).
  2. Wash and scrub the beets thoroughly. Trim the tops and roots, then peel them.
  3. Cut the beets into uniform 1-inch cubes.
  4. In a bowl, toss the beet cubes with olive oil, salt, and pepper until evenly coated.
  5. Place the beets in the air fryer basket in a single layer.
  6. Cook for 25 minutes, shaking the basket halfway through for even cooking.
  7. Once cooked, remove the beets and drizzle with balsamic vinegar if desired.

Notes

For easier peeling, you can microwave the whole beets for 3-4 minutes before peeling them. This dish pairs wonderfully with a fresh salad or as a colorful side to your main course.
