Instructions

Step 1: Prepare the zucchini

Preheat the oven to 350°F (175°C).

Wash the zucchini thoroughly and pat it dry with a clean kitchen towel.

There is no need to peel the zucchini. The skin is tender and edible, and leaving it on adds color and texture to the casserole.

Using the large holes of a box grater, shred the zucchini until you have approximately 4 cups.

Because zucchini naturally contains a significant amount of water, check how wet the shredded zucchini is. If it is releasing a lot of liquid, place it in a clean kitchen towel and gently squeeze out some of the excess moisture.

You do not need to make the zucchini completely dry. A little moisture helps keep the casserole tender, but removing excessive liquid helps prevent a soggy texture.

Step 2: Prepare the onion

Peel the onion and chop it into small pieces.

For a quick version of this recipe, the chopped onion can be mixed directly into the casserole.

If you want a deeper, sweeter onion flavor, you can sauté the onion in a skillet over medium heat for several minutes before adding it to the mixture.

Allow sautéed onions to cool slightly before combining them with the eggs.

Step 3: Combine the zucchini and onion

Place the shredded zucchini and chopped onion in a large mixing bowl.

Some zucchini is much more watery than others, especially very large garden-grown zucchini. If your shredded zucchini looks extremely wet, gently squeeze out some of the excess liquid before adding it to the recipe.

However, avoid squeezing every drop of moisture from the zucchini. The natural moisture helps create the soft, tender texture that makes this casserole so enjoyable.

The size of your baking dish also affects cooking time. A wider, shallower dish will generally cook faster than a smaller, deeper dish.

The casserole is ready when the center is set and no longer looks wet or loose. The edges should be lightly golden, and the cheese on top should be melted and browned.

If you notice that the cheese is browning too quickly, cover the top loosely with foil during the remaining cooking time.
