Sweet Potato Bread
  • 100 g sugar use white granulated sugar
  • 100 g light brown sugar packed
  • 120 ml vegetable oil can substitute with melted butter
  • 2 large eggs room temperature
  • 210 g flour all-purpose flour
  • 1 tsp baking soda ensure freshness for best results
  • 1/4 tsp salt to balance sweetness
  • 3/4 tsp ground cinnamon adds warmth and flavor
  • 1/2 tsp ground nutmeg for a hint of spice
  • 80 ml whole milk can use plant-based milk
  • 250 g sweet potatoes cooked and mashed, should be smooth

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a large bowl, mix the sugar, brown sugar, and vegetable oil until well combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  5. Alternately add the dry ingredients and the milk to the sugar mixture, mixing until just combined.
  6. Fold in the mashed sweet potatoes until evenly distributed.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

This bread can be served warm with butter or a drizzle of honey. It also makes a delightful gift!
