Ingredients

  • 240 g flour
  • 240 ml cold milk
  • 67 g sugar
  • 5 tbsp cold or frozen butter Grate for easier mixing
  • 4 tsp baking powder
  • 1 tsp salt
  • 85 g blueberries fresh or dried Toss in flour to prevent sinking
For the glaze
  • 120 g powdered sugar
  • 30 ml water
  • 1 tsp vanilla extract
  • 0.5 tsp lemon juice Enhances the blueberry flavor

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in milk until just combined, then gently fold in blueberries.
  5. Drop dough by spoonfuls onto a baking sheet, spacing them apart.
  6. Bake for 15-20 minutes or until golden brown.
  7. To make the glaze, mix powdered sugar, water, vanilla extract, and lemon juice until smooth.
  8. Drizzle glaze over warm biscuits before serving.
