Ingredients
  

Truffles
  • 15.25 ounce vanilla cake mix I used Betty Crocker
  • 8 ounce cream cheese softened to room temperature
  • 0.5 cup freeze dried strawberries roughly chopped
  • 20 ounces vanilla melting wafers 2-10 oz bags – Ghirardelli
  • 0.5 cup red candy melts Wilton
  • g freeze-dried strawberries- crushed – for topping

Equipment

  • Medium mixing bowl
  • Hand mixer or stand mixer
  • Baking Tray

Method
 

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Spread the cake mix powder onto the prepared baking sheet and bake for 5 minutes. Remove from the oven and allow it to cool completely on a wire rack.
  3. Beat the softened cream cheese in a medium mixing bowl until smooth and creamy.
  4. Add the cake mix and fold it into the cream cheese. Mix until fully combined and dough consistency is achieved.
  5. Fold in the freeze-dried strawberries until fully combined. Cover and chill in the refrigerator for 2 hours.
  6. Line two baking sheets with parchment paper. Use a 1 ½ tablespoon cookie scoop to scoop the dough and place onto prepared sheets. Roll each into smooth balls and let sit for 15 minutes.
  7. Melt the vanilla melting wafers using a double boiler or microwave. Dip each truffle into the melted wafers, remove excess, and place onto lined baking sheet.
  8. Sprinkle crushed freeze-dried strawberries on top of half the truffles before coating sets. Melt and drizzle red candy melts over remaining truffles.
  9. Allow to set completely before serving.

Notes

Chilling the dough helps make it easier to roll into balls. Allow truffles to expand slightly after rolling to prevent cracking when coated. Use high-quality wafers for best results.
