Ingredients
  

Pastry
  • 1 package frozen puff pastry sheets thawed
  • ½ cup strawberry jam/preserves
  • 2 tsp cornstarch
  • 1 tsp fresh lemon juice
  • 1 egg egg
  • ¼ cup heavy whipping cream plus 1 tablespoon, divided
  • 1 tbsp coarse sugar
Glaze
  • 1 cup powdered sugar sifted
  • ¼ tsp vanilla extract
  • 1 pinch kosher salt

Method
 

  1. Preheat your oven to 400 degrees F. Unfold one sheet of puff pastry and cut into six rectangles. Transfer to a parchment-lined baking sheet, spacing them apart. Repeat with the second sheet.
  2. In a small bowl, mix strawberry jam, cornstarch, and lemon juice. Spoon a tablespoon of the mixture onto each rectangle, leaving a border.
  3. Whisk the egg with 1 tablespoon of cream. Brush the borders of each rectangle with the egg wash.
  4. Prick reserved pastry rectangles with a fork. Place them on filled rectangles, pressing edges to seal. Crimp edges with a fork, brush with egg wash, and sprinkle with coarse sugar.
  5. Bake for 18-20 minutes until puffed and golden. Rotate pan halfway for even browning. Cool on pan for 30 minutes.
  6. Whisk powdered sugar, vanilla, salt, and remaining cream until smooth. Drizzle over cooled strudels.

Notes

For a different flavor, try using apricot or raspberry jam instead of strawberry. Serve warm for the best taste, and pair with a cup of coffee or tea.
