Ingredients
  

Toast
  • 2 slices brioche bread 1 inch thick
  • 3 tablespoons Kerrygold butter
  • 1 teaspoon granulated sugar
Cheesecake Filling
  • 1/4 cup whipped cream cheese
  • 1/4 cup powdered sugar can substitute honey or coconut sugar
  • 1/4 teaspoon orange zest or orange blossom water
Toppings
  • 1/2 cup sliced strawberries
  • 2 teaspoons powdered sugar
  • 1 tablespoon coarse sugar optional

Method
 

  1. Preheat a skillet over medium heat, and add 1 tablespoon of the butter. Butter each side of the bread with the remaining 2 tablespoons of butter.
  2. Sprinkle each side of the bread with the granulated sugar before placing in the skillet. Toast the bread on each side until golden brown, about 1 minute per side.
  3. Meanwhile, slice the strawberries and toss them with 2 teaspoons of powdered sugar. Set aside.
  4. In a small bowl, beat together the cream cheese, remaining 1/4 cup of powdered sugar and orange zest until fluffy.
  5. Remove the toast from the skillet, and top each slice with the cheesecake filling, followed by the strawberries. Sprinkle coarse sugar on top before serving, if desired.

Notes

For a twist, try adding a drizzle of chocolate sauce or a sprinkle of crushed nuts. Perfect for a sweet brunch or dessert.
