Ingredients
  

Cookie Dough
  • 432 g strawberry cake mix 1 box
  • 170 g cream cheese room temperature
  • 120 ml vegetable oil
  • 1 large egg room temperature
  • 1 tsp baking powder
  • 135 g white chocolate chips

Method
 

  1. Combine the cake mix, cream cheese, vegetable oil, egg, and baking powder in a large mixing bowl. Beat well, until completely combined.
  2. Fold in the white chocolate chips.
  3. Cover and chill the dough for at least 30 minutes.
  4. Preheat the oven to 350 degrees. Line several baking sheets with parchment paper.
  5. Use a small cookie scoop, and portion the dough out onto the lined baking sheets – placing each one 2” apart to allow for spreading.
  6. Bake for 11-13 minutes or until the cookies are set and the edges are golden brown.
  7. Allow the cookies to cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.

Notes

These cookies are best enjoyed fresh but can be stored in an airtight container for up to a week. Try adding a sprinkle of sea salt on top for a sweet and salty twist.
