Ingredients
  

  • 1 cup Sushi Rice Cook according to package instructions
  • 60 ml Rice Wine Vinegar
  • 2 tsp Sugar
  • 1 tsp Salt
  • 60 g Furikake Seasoning
  • 8 oz Salmon Fillets Two portions
  • 15 ml Soy Sauce Use gluten-free soy sauce or tamari if needed
  • 60 g Cream Cheese Softened
  • 60 ml Mayonnaise Kewpie or regular
  • 30 ml Sriracha Sauce Can substitute with sambal oelek
  • 1 whole Avocado Sliced or cubed
  • 1 whole Cucumber Sliced or cubed
  • 2 stalks Green Onions Sliced
  • 4 sheets Nori Seaweed Sheets For topping
  • 30 ml More Kewpie Mayo Drizzle on top
  • 30 ml Unagi Sauce Drizzle on top

Method
 

  1. Cook sushi rice according to package instructions. Once cooked, mix rice wine vinegar, sugar, and salt into the rice.
  2. In a bowl, combine furikake seasoning, salmon fillets, soy sauce, cream cheese, mayonnaise, and sriracha sauce. Mix well.
  3. In a baking dish, layer the seasoned sushi rice, followed by the salmon mixture. Bake at 350°F for about 25 minutes.
  4. Once baked, top with avocado, cucumber, green onions, nori, and drizzle with kewpie mayo and unagi sauce before serving.

Notes

You can adjust the spiciness by varying the amount of sriracha. This dish is perfect for a sushi night at home.
