- Preheat your oven to 350°F (175°C).
- In a large skillet, sauté the squash and onion in 2 tablespoons of butter until tender.
- Stir in the sour cream, soup, and cheddar cheese. Season with salt and pepper.

- Combine the crushed crackers with melted butter and sprinkle over the top.
- Bake for 30-40 minutes or until the top is golden brown.
