  • 900 g yellow squash sliced Fresh and ripe for sweetness
  • 120 g onion chopped Finely chopped for even cooking
  • 30 g butter Use unsalted butter
  • 120 g sour cream Full-fat for creaminess
  • 1 can cream of chicken soup Use cream of mushroom for vegetarian option
  • 100 g shredded cheddar cheese Sharp cheddar preferred
  • 1 tsp salt Adjust to taste
  • 1 tsp pepper Freshly ground for best flavor
  • 250 g crushed buttery crackers Ritz or similar brand
  • 60 g butter melted Use for topping

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, sauté the squash and onion in 2 tablespoons of butter until tender.
  3. Stir in the sour cream, soup, and cheddar cheese. Season with salt and pepper.
  4. Transfer the mixture to a greased casserole dish.
  5. Combine the crushed crackers with melted butter and sprinkle over the top.
  6. Bake for 30-40 minutes or until the top is golden brown.

Notes

This casserole can be made ahead and refrigerated before baking. For added flavor, consider mixing in some cooked bacon bits or a dash of hot sauce.
