Ingredients
  

Meatloaf
  • 680 g ground beef
  • 1 cup breadcrumbs
  • 113 g cream cheese, softened
  • 1 jalapeños, finely diced remove seeds for less heat
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 2 tbsp ketchup
  • 1 tsp smoked paprika
  • Salt and freshly ground black pepper, to taste
Creamy Ranch Drizzle
  • 240 ml ranch dressing
  • 120 ml sour cream
  • 1 tsp garlic powder
  • Salt and freshly ground black pepper, to taste

Method
 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, softened cream cheese, diced jalapeños, chopped onion, minced garlic, egg, ketchup, smoked paprika, salt, and pepper. Mix until all ingredients are well incorporated.
  3. Transfer the meat mixture to the prepared baking sheet or loaf pan. Shape it into a loaf, ensuring it's evenly formed for consistent cooking.
  4. Place the meatloaf in the preheated oven and bake for 45–50 minutes, or until the internal temperature reaches 160°F (71°C).
  5. While the meatloaf is baking, in a medium bowl, whisk together the ranch dressing, sour cream, garlic powder, salt, and pepper until smooth. Adjust seasoning to taste. Refrigerate until ready to use.
  6. Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Drizzle the creamy ranch sauce over each slice before serving. Serve with your favorite sides and enjoy!

Notes

For a milder version, remove the seeds from the jalapeños. Pair with mashed potatoes or a green salad for a complete meal.
