  • 3 pounds russet potatoes peeled and thinly sliced
  • 1 cup shredded Cheddar Use sharp Cheddar for extra flavor
  • 1 cup chopped fully cooked ham Ensure ham is diced evenly
  • 0.5 cup chopped onion White or yellow onion works well
  • 10.5 ounces condensed cream of mushroom soup Do not dilute
  • 0.5 cup water Adjust consistency if needed
  • 0.5 tsp garlic powder Add more for a garlicky kick
  • 0.25 tsp salt Season to taste
  • 0.25 tsp black pepper Freshly ground for best flavor

Equipment

  • Slow Cooker

Method

  1. Put potato slices in the slow cooker.
  2. Combine Cheddar, ham and onion in a bowl; gently toss through the potatoes.
  3. In the emptied bowl, blend condensed soup, water, garlic powder, salt and pepper.
  4. Spread this sauce evenly over the potato mixture.
  5. Cover and cook on HIGH approximately 4 hours. Check that a fork easily pierces the potatoes; continue cooking if necessary.
  6. Serve warm, spooning the creamy sauce over each portion.

Notes

For a creamier texture, consider adding more cheese on top during the last 30 minutes of cooking.
