  • 240 ml coconut milk Use full-fat coconut milk for a richer sauce.
  • 30 ml honey Adds a touch of sweetness to balance the flavors.
  • 2 cloves garlic (minced) Freshly minced for best flavor.
  • 1 inch ginger (grated) Grate finely to distribute evenly in the sauce.

Method
 

  1. Place chicken thighs in the slow cooker.
  2. In a bowl, mix peanut butter, soy sauce, coconut milk, honey, garlic, and ginger.
  3. Pour the sauce over the chicken.
  4. Cook on low for 4 hours or until the chicken is tender.
  5. Shred the chicken and mix it with the sauce before serving.

Notes

Serve with steamed rice or noodles for a complete meal. Garnish with chopped peanuts or fresh cilantro for added flavor and texture.
