  • 907 g beef chuck, cut into chunks
  • 680 g Little Yellow Potatoes
  • 1 small onion, chopped use yellow or white onion
  • 4 cloves garlic, minced fresh garlic enhances flavor
  • 480 ml beef broth low sodium if preferred
  • 3 tbsp butter unsalted butter
  • 1 tsp dried thyme adds earthy flavor
  • 1 tsp dried rosemary adds aromatic flavor
  • 1 tsp salt adjust to taste
  • 0.5 tsp black pepper freshly ground if possible
  • 2 tbsp flour for thickening the gravy
  • 2 tbsp chopped fresh parsley for garnish

Method
 

  1. Place beef, potatoes, onion, and garlic into the slow cooker.
  2. Sprinkle with salt, pepper, thyme, and rosemary. Add the butter.
  3. Pour in the beef broth.
  4. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is tender.
  5. Mix flour with a little cold water to make a smooth slurry. Stir it into the gravy during the last 20–30 minutes of cooking.
  6. Stir gently, sprinkle with fresh parsley, and serve hot.

Notes

This dish pairs wonderfully with a big piece of crusty bread to soak up the delicious gravy.
