  • 240 g cooked shrimp, chopped Ensure shrimp is cooked and chopped finely.
  • 240 g crab meat, drained Use fresh or canned crab meat.
  • 1 each bell pepper, thinly sliced Choose any color bell pepper you prefer.
  • 1 each onion, thinly sliced Yellow or white onion recommended.
  • 1 tsp fajita seasoning Adjust seasoning to taste.
  • 30 ml olive oil Use extra virgin olive oil for best flavor.
Assembly
  • 8 each large flour tortillas Use large tortillas to hold the filling well.
  • 120 g shredded Monterey Jack cheese Cheddar or a cheese blend can be used as a substitute.
  • 60 ml sour cream For dipping, can substitute with Greek yogurt.
  • 10 g Fresh cilantro, chopped Optional garnish for added freshness.

Method
 

  1. In a skillet, heat olive oil over medium heat. Add bell pepper and onion, sauté until soft.
  2. Add shrimp, crab meat, and fajita seasoning. Stir until heated through.
  3. Place a portion of the filling on each tortilla, sprinkle with cheese, and roll tightly.
  4. Heat the roll-ups in the skillet until the tortillas are golden and the cheese melts.
  5. Serve with sour cream and garnish with fresh cilantro.

Notes

For a spicier kick, add sliced jalapeños to the filling. These roll-ups can be served as appetizers or a main dish.
