Seafood Filling
  • 240 g cooked shrimp, chopped Ensure shrimp is peeled and deveined.
  • 240 g crab meat Use fresh or canned crab meat.
  • 240 ml Alfredo sauce Use your favorite brand or homemade.
  • 240 g ricotta cheese Adds creaminess to the filling.
  • 240 g mozzarella cheese, shredded For topping and filling.
  • 120 g Parmesan cheese, grated Adds a rich, nutty flavor.
  • 1 tbsp garlic, minced Enhances flavor of the seafood.
  • 1 tbsp olive oil For sautéing garlic or greasing dish.
  • 1 tsp Salt and pepper Season to taste.
  • 1 bunch Fresh parsley, for garnish Add a fresh, herby finish.
  • 9 noodles lasagna Cook according to package instructions.

Method
 

  1. Cook the lasagna noodles according to package instructions.
  2. In a bowl, combine shrimp, crab, ricotta, garlic, salt, and pepper.
  3. Spread some Alfredo sauce on the bottom of a baking dish.
  4. Lay out each noodle and fill with the shrimp and crab mixture, then roll up.
  5. Place the roll-ups in the baking dish and top with remaining Alfredo sauce and mozzarella cheese.
  6. Bake at 350°F for 30 minutes or until cheese is bubbly.
  7. Garnish with fresh parsley before serving.

Notes

For a spicier version, add red pepper flakes to the seafood mixture. Serve with a side salad for a complete meal.
