Ingredients
  

Shortbread Cookies
  • 1 stick butter, softened
  • 50 g granulated sugar
  • 1 g egg
  • 0.5 tsp vanilla extract
  • 0.25 tsp almond extract
  • 120 g flour
  • 0.25 tsp salt
  • 50 g strawberry jelly

Method
 

  1. Line a large baking sheet with a silicone mat, and make room in your fridge for a cookie sheet.
  2. In a large bowl, add the softened butter and beat with an electric mixer on HIGH until light and fluffy.
  3. Stream in the sugar while beating.
  4. Beat in the egg, vanilla extract, and almond extract very well.
  5. Evenly sprinkle the flour and salt on the dough. Mix with the electric mixer just until it comes together.
  6. Scoop out 2 teaspoons of dough, roll it into a ball, and place on a baking sheet.
  7. Make heart shapes using your pinky and fill with jelly.
  8. Chill cookies in the fridge for one hour before baking.
  9. Preheat oven to 350°F and bake cookies for 12 minutes until edges start to turn golden brown.
  10. Let cookies cool on the baking pan completely before removing.

Notes

These cookies are delicate when warm, so let them cool completely before handling. Experiment with different jams for variety.
