Ingredients
  

Pancake Batter
  • 1.5 cups Homemade Pancake Mix See linked recipe in Notes
  • 180 ml buttermilk
  • 180 ml milk
  • 2 eggs
  • 1.5 tbsp melted butter
  • 1 tsp vanilla extract
Garnish
  • 1 tbsp Coarse sugar Optional
  • 2 cups Fresh berries Optional
  • 0.5 cups Granola Optional
  • 100 ml Pure maple syrup Optional

Method
 

  1. Preheat your oven to 425 degrees F. Line a quarter baking sheet with parchment paper and spray with baking spray. Set aside.
  2. In a bowl, mix the Homemade Pancake Mix with the buttermilk, milk, eggs, melted butter, and vanilla extract. Stir until just combined. Let sit for 5-8 minutes.
  3. Pour the batter into the prepared baking sheet. Spread out evenly with a spatula. Sprinkle with a tablespoon of coarse sugar for added interest and sparkle.
  4. Bake for about 12 minutes or until lightly browned.
  5. Cut into squares and serve with mixed berries, granola, and pure maple syrup as desired.

My quarter baking sheet is 13 x 9 x 1 inch. You can find my recipe for Homemade Pancake Mix HERE. This Sheet Pan Pancake recipe is designed to work with this Homemade Pancake Mix only. A store-bought mix will not achieve the same results.
