  • 1 lb turkey sausage, sliced into ¼-inch rounds or use any sausage you like
  • 1 large green bell pepper, sliced
  • 1 medium yellow bell pepper, sliced optional
  • 1 large yellow onion, sliced
  • 1 cup cherry tomatoes, halved or 1 medium tomato, diced
  • 2 tbsp olive oil or butter
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 0.5 tsp salt or to taste
  • 1 tsp Cajun seasoning optional
  • 2 cups cooked white rice for serving

Method
 

  1. Heat the Pan: Warm the olive oil (or butter) in a large skillet over medium heat.
  2. Brown the Turkey Sausage: Add the sausage slices in a single layer. Cook for 4–5 minutes on each side, until nicely browned. Remove from the skillet and set aside.
  3. Sauté the Veggies: In the same pan, add the sliced onions and bell peppers. Sauté for about 5–6 minutes, until they begin to soften. Add the cherry tomatoes and cook for another 2–3 minutes, stirring occasionally, until the tomatoes start to soften and release their juices.
  4. Season and Combine: Return the browned sausage to the skillet. Sprinkle in the garlic powder, black pepper, salt, and Cajun seasoning (if using). Stir to combine all the flavors.
  5. Simmer: Let everything cook together for another 2–3 minutes, so the flavors meld and the tomato juices thicken up the mixture a bit.
  6. Serve: Spoon the turkey sausage and vegetable mixture over hot, cooked white rice. Serve right away and enjoy!

Notes

For a spicier version, add extra Cajun seasoning or serve with hot sauce. This dish is perfect for using up leftover vegetables.
