  • 4 pieces Chicken breasts boneless, skinless
Filling
  • 2 cups Fresh spinach chopped
  • 1 cup Feta cheese crumbled
  • 0.5 cup Sun-dried tomatoes drained and chopped
  • 2 tablespoons Olive oil
  • 2 cloves Garlic minced
  • to taste Salt and pepper
  • 1 tsp Italian seasoning or dried herbs optional
  • to taste Fresh herbs like basil or parsley for garnish

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the spinach, feta cheese, sun-dried tomatoes, minced garlic, olive oil, salt, and pepper.
  3. Place the chicken breasts on a flat surface and pound them to an even thickness.
  4. Spoon the spinach mixture onto each chicken breast, then roll them up tightly and secure with toothpicks.
  5. Arrange the rolled chicken in a baking dish, sprinkle with Italian seasoning, and add more salt and pepper if desired.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
  7. Let the chicken rest for a few minutes before slicing. Garnish with fresh herbs before serving.
