- Heat olive oil in a skillet over medium heat. Add diced onion and cook until soft.
- Add garlic and chicken, cooking until the chicken is browned. Stir in mushrooms and paprika.
- Pour in chicken broth and bring to a simmer. Cook for 10 minutes.
- Reduce heat and stir in sour cream and Dijon mustard. Cook until heated through. Season with salt and pepper.
- Serve over cooked egg noodles or rice and garnish with parsley.
Notes
For a richer flavor, you can add a splash of white wine while cooking the chicken. This dish pairs well with a side of steamed vegetables.
