Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 1 1/2 cups Rice Krispies cereal

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips and Rice Krispies cereal, being careful not to crush the cereal too much.
  6. Scoop about 1 1/2 tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are golden brown and the centers are slightly soft. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For an extra crunch, toast the Rice Krispies lightly before adding them to the dough. Use milk chocolate chips for a sweeter, creamier flavor.
