Method
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips and Rice Krispies cereal, being careful not to crush the cereal too much.
- Scoop about 1 1/2 tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are slightly soft. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For an extra crunch, toast the Rice Krispies lightly before adding them to the dough. Use milk chocolate chips for a sweeter, creamier flavor.
