Ingredients

Potato Skins
  • 6 pieces potatoes
  • 240 ml vegetable oil, for frying Use a high smoke point oil for best results.
  • 227 g shredded Cheddar Choose a sharp Cheddar for extra flavor.
  • 2 tbsp bacon bits, optional Omit for a vegetarian version.
  • 454 g sour cream, for serving Serve alongside for dipping.
  • 2 pieces green onions, sliced Use as a garnish for added freshness.
  • 1 tsp Black pepper, optional Season to taste.

Equipment

  • 9x13-inch baking pan

Method

  1. Heat oven to 375°F (190°C); grease a 9×13-inch baking pan.
  2. Pierce potatoes; microwave 10–12 minutes, until tender. Cool enough to handle. Halve lengthwise; scoop out centers, retaining a 1/4-inch lining.
  3. Pat shells dry. Fry in oil at 365°F (185°C) about 5 minutes; drain on paper towels.
  4. Divide Cheddar and optional bacon among shells. Bake about 7 minutes, until melted and hot.
  5. Add green onions and optional pepper. Serve sour cream alongside.

Notes

For extra crispy skins, ensure they're thoroughly dried before frying. Experiment with different cheeses or add spices to the sour cream for a twist.
