Ingredients
  

Mug Cake
  • 3 tbsp coconut flour
  • 1 tbsp ground flaxseed
  • 1/8 tsp salt
  • 1/2 tsp baking powder
  • 60 ml heavy cream
  • 2 g eggs
  • 1/4 tsp almond extract
  • 1 tsp vanilla liquid stevia
  • 250 g Cannoli frosting
  • 50 g chopped pistachios for garnish
  • 50 g chocolate chips for garnish

Method
 

  1. In a bowl whisk all ingredients together except frosting.
  2. Once combined well, pour mixture into two greased 7 ounce quiche ramekins.
  3. Microwave: Bake one at a time for 1 minute each or until toothpick in center comes out clean.
  4. Oven: Place cakes in a preheated 350 degree oven and bake for 10 minutes or until a toothpick in center comes out clean.
  5. Allow to cool completely before frosting and decorating.

Notes

For a richer flavor, consider adding a few drops of red food coloring to enhance the traditional red velvet look. Perfect served warm with a scoop of vanilla ice cream.
