Ingredients

Cake
  • 432 g Red Velvet Cake Mix
  • 295 ml water
  • 3 units eggs
  • 120 ml vegetable oil
Coating
  • 454 g cream cheese frosting store-bought or homemade
  • 454 g white chocolate candy coating or almond bark
  • 15 units Red Candy Melts optional for decoration

Equipment

  • Baking Sheet
  • Mixing Bowl
  • Skewer

Method

  1. Bake the cake according to directions on the package.
  2. Let it cool completely, optionally placing it in the freezer for 45 minutes to speed up cooling.
  3. Crumble the entire cooled cake into a bowl using your hands.
  4. Stir in the container of frosting into the crumbled cake, about ½ cup at a time, until it reaches a consistency that holds together when rolled.
  5. Roll the cake and frosting mixture into balls and place them on a large baking sheet. Chill in the fridge for about 30 minutes to set.
  6. Melt the white chocolate candy coating according to package directions. Use a skewer to dip each ball into the melted coating, ensuring even coverage.
  7. Place the coated cake bites back onto the pan or wax paper and let them set. Chill in the fridge to speed up the hardening process, if desired.
  8. Melt the red candy melts according to package directions, if using for decoration.
  9. Spoon the melted candy into a resealable sandwich bag, clip a tiny corner, and drizzle over each cake bite.

Notes

For best results, allow the cake bites to fully set before serving. They make a great choice for parties and can be stored in an airtight container in the fridge for up to a week.
