- Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish and set aside.
- In a mixing bowl, combine the yellow cake mix and crushed pineapple (with juice) until well mixed. The batter will be thick. Spread evenly in the prepared baking dish.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
- In another bowl, beat the softened cream cheese and melted butter together until smooth. Gradually add the powdered sugar and mix until creamy.
- Gently fold the whipped topping into the cream cheese mixture. Spread this frosting over the cooled cake.
- Sprinkle the top with shredded coconut and chopped pecans, if using.
- Chill the cake in the refrigerator for at least 1 hour before serving.
Notes
For an extra tropical twist, add a few tablespoons of pineapple juice to the frosting. Toast the shredded coconut and pecans for enhanced flavor and crunch.
