  • 1 box yellow cake mix
  • 1 can crushed pineapple, with juice 20 oz
Frosting
  • 125 g unsalted butter, melted
  • 1 cup powdered sugar
  • 1 package cream cheese, softened 8 oz
  • 1 tub whipped topping (e.g., Cool Whip) 8 oz
Toppings
  • 50 g shredded coconut optional
  • 30 g chopped pecans optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish and set aside.
  2. In a mixing bowl, combine the yellow cake mix and crushed pineapple (with juice) until well mixed. The batter will be thick. Spread evenly in the prepared baking dish.
  3. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
  4. In another bowl, beat the softened cream cheese and melted butter together until smooth. Gradually add the powdered sugar and mix until creamy.
  5. Gently fold the whipped topping into the cream cheese mixture. Spread this frosting over the cooled cake.
  6. Sprinkle the top with shredded coconut and chopped pecans, if using.
  7. Chill the cake in the refrigerator for at least 1 hour before serving.

Notes

For an extra tropical twist, add a few tablespoons of pineapple juice to the frosting. Toast the shredded coconut and pecans for enhanced flavor and crunch.
