Ingredients
  

Base
  • 113 g butter 1 stick (1/2 cup)
  • 1 egg lightly beaten
  • 240 ml milk
  • 125 g all-purpose flour
  • 200 g sugar
  • 2 tsp baking powder
  • 0.5 tsp salt
Topping
  • 40 oz pineapple chunks drained, 2 cans
  • 226 g cream cheese cut into small pieces, 8 oz

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Place the butter in a 9×13-inch glass baking dish and place it in the oven to melt. Once melted, remove from the oven.
  3. In a mixing bowl, combine the egg, milk, flour, sugar, baking powder, and salt. Whisk until smooth.
  4. Pour the batter directly over the melted butter without stirring to create the classic cobbler layering effect.
  5. Add the pineapple chunks on top, spreading them into an even layer as best as possible.
  6. Drop the cream cheese pieces evenly over the pineapple.
  7. Bake for 45 minutes, or until the top is golden brown, the edges are bubbling, and the center is set.
  8. Let cool slightly and serve warm plain or topped with whipped cream or vanilla ice cream.

Notes

This cobbler is perfect served warm with a scoop of vanilla ice cream or a dollop of whipped cream. You can also try adding a sprinkle of cinnamon for extra flavor.
