  • 2 cups jasmine rice Cook according to package instructions
  • 450 g boneless, skinless chicken breasts, diced Cut into bite-sized pieces
  • 60 ml soy sauce Use low-sodium if preferred
  • 30 ml honey Adds sweetness to balance the soy sauce
  • 15 ml rice vinegar Provides a slight tang
  • 0.5 tsp crushed red pepper flakes Optional, for a spicy kick
  • 240 g fresh pineapple chunks Use canned, drained if fresh is unavailable
  • 1 small red bell pepper, diced Adds color and flavor
  • 1 small onion, chopped Enhances the dish's flavor
  • 2 cloves garlic, minced Adds depth and aroma
  • to taste Salt and pepper Season to taste

Method
 

  1. Cook the jasmine rice according to package instructions.
  2. In a skillet, heat vegetable oil over medium heat. Add diced chicken and cook until browned.
  3. Add onion, bell pepper, and garlic to the skillet. Cook until vegetables are tender.
  4. Stir in pineapple, soy sauce, honey, rice vinegar, and red pepper flakes. Cook for an additional 5 minutes.
  5. Serve the chicken mixture over rice and garnish with sliced green onions. Season with salt and pepper to taste.

Notes

Feel free to adjust the level of spice by adding more or less red pepper flakes. Serve with additional soy sauce on the side if desired.
