Ingredients
  

Peanut Butter Mixture
  • 120 g peanut butter
  • 60 g unsalted butter softened
  • 42 g powdered sugar
  • 0.5 tsp vanilla extract
  • 0.125 tsp flaky salt
Chocolate Coating
  • 113 g dark chocolate chopped
  • 1 tsp coconut oil
Garnish
  • to taste chopped peanuts for garnish
  • to taste flaky sea salt for garnish

Method
 

  1. In a mixing bowl, add the peanut butter, powdered sugar, butter, vanilla, and salt.
  2. Use an electric mixer to beat the mixture together. If the butter is too soft, freeze the mixture for 20 minutes before proceeding.
  3. Scoop out 10 balls of dough and place them on a small baking sheet lined with wax paper or a silicone mat.
  4. Place the peanut butter balls in the freezer for 20 minutes.
  5. While the truffles are freezing, melt the chocolate and coconut oil together using a double boiler or microwave until smooth.
  6. Remove the balls from the freezer. Use a fork or candy tool to dunk each truffle in the chocolate, then let excess chocolate drain.
  7. Place the truffles in the fridge to set for at least 5 minutes before serving.

Notes

These truffles are rich and soft, even when frozen. You can customize them with different garnishes or use milk chocolate for a sweeter version.
