Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the smoked sausage, potatoes, bell pepper, and onion.
  3. Drizzle with olive oil and sprinkle with garlic powder, onion powder, smoked paprika, Italian seasoning, salt, and pepper. Toss to coat evenly.
  4. Spread the mixture in a single layer on a baking sheet.
  5. Roast in the preheated oven for 35-40 minutes, stirring halfway through, until the potatoes are tender and golden brown.
  6. Garnish with fresh parsley or chives before serving, if desired.
