  • 240 g all-purpose flour ensure it's sifted for the best texture

  • 113 g unsalted butter softened to room temperature
  • 150 g sugar provides sweetness and structure
  • 2 g large eggs ensure they are at room temperature for best results
  • 120 ml fresh orange juice use freshly squeezed for the best flavor
  • 1 tbsp orange zest adds a concentrated citrus flavor
  • 120 ml milk adds moisture to the cake
  • 1 tsp vanilla extract enhances the overall flavor

  • 100 g powdered sugar for the glaze
  • 45 ml fresh orange juice mix with powdered sugar for the glaze

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy. Add the eggs, orange juice, orange zest, milk, and vanilla extract, and mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. If using the glaze, mix the powdered sugar with orange juice until smooth and drizzle over the cooled cake.

Notes

For an extra citrus kick, consider adding a teaspoon of lemon zest to the batter. Serve slices with a dollop of whipped cream or enjoy as is with a cup of tea.
