- Heat a large pot or deep skillet over medium heat.
- (Optional) Add 1 tablespoon of olive oil and minced garlic for extra flavor.
- Add the ground beef and cook until browned, breaking it into crumbles as it cooks. Drain excess grease if needed.
- Sprinkle the taco seasoning over the browned beef. Stir well to coat the meat evenly with the spices.
- Add the diced tomatoes, tomato sauce, and beef broth or water to the pot. Stir in the uncooked pasta, ensuring it is submerged in the liquid.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 10–12 minutes, stirring occasionally to prevent the pasta from sticking.
- Once the pasta is cooked al dente and most of the liquid is absorbed, reduce the heat to low. Stir in the shredded cheese until melted and creamy.
- Remove from heat and garnish with your choice of toppings: cilantro, green onions, or a dollop of sour cream. Serve immediately and enjoy!
