- In a large skillet, heat olive oil over medium heat. Season the chicken pieces with salt and pepper, then add to the skillet. Cook until browned and cooked through.
- Add BBQ sauce, honey, apple cider vinegar, Dijon mustard, garlic powder, and smoked paprika to the skillet. Stir to combine.
- Pour in the chicken broth and bring to a boil. Add the penne pasta, stir, and reduce heat to a simmer. Cook until the pasta is tender.
- Once the pasta is cooked, stir in the mozzarella and Parmesan cheese until melted. Garnish with fresh parsley before serving.
