Method
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper.
- In an oven-safe skillet, melt the butter over medium heat. Add the mushrooms, garlic, and thyme, and sauté until mushrooms are golden.
- Add the spinach to the skillet and cook until wilted.
- Remove the mushroom and spinach mixture from the skillet and set aside.
- Make a pocket in each chicken breast and stuff with the mushroom mixture and cheese.
- Heat olive oil in the same skillet and sear the stuffed chicken breasts until golden on each side.
- Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken is cooked through.

Serve with a side of roasted vegetables or a fresh salad for a balanced meal.
