Ingredients
  

Chicken and Stuffing
  • 2 g chicken breasts 220g or 7oz each, skinless and boneless
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 30 g unsalted butter
  • 200 g mushrooms sliced about 1/8" thick
  • 2 g cloves garlic finely minced
  • 1/2 tsp thyme leaves
  • 2 cups fresh baby spinach
  • 80 g mozzarella cheese sliced or any cheese that melts well
  • 1 tablespoon olive oil

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. In an oven-safe skillet, melt the butter over medium heat. Add the mushrooms, garlic, and thyme, and sauté until mushrooms are golden.
  4. Add the spinach to the skillet and cook until wilted.
  5. Remove the mushroom and spinach mixture from the skillet and set aside.
  6. Make a pocket in each chicken breast and stuff with the mushroom mixture and cheese.
  7. Heat olive oil in the same skillet and sear the stuffed chicken breasts until golden on each side.
  8. Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken is cooked through.

Notes

Serve with a side of roasted vegetables or a fresh salad for a balanced meal.
