Ingredients
  

Dry Ingredients
  • 250 g all-purpose flour spooned & leveled
  • 1 tsp baking soda
  • 0.25 tsp salt
  • 0.5 tsp ground cinnamon
Wet Ingredients
  • 115 g unsalted butter softened
  • 150 g light or dark brown sugar packed
  • 2 large eggs room temperature
  • 80 ml plain Greek yogurt or full-fat sour cream
  • 360 g mashed bananas about 3–4 ripe bananas
  • 1 tsp pure vanilla extract
Optional Add-ins
  • 75 g chopped pecans or walnuts
  • 175 g semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°F (177°C). Grease a 9x5-inch loaf pan.
  2. Whisk flour, baking soda, salt, and cinnamon in a bowl.
  3. In another bowl, beat butter and brown sugar until smooth.
  4. Add eggs, yogurt, mashed bananas, and vanilla to the butter mixture. Mix well.
  5. Gradually add dry ingredients to wet ingredients. Stir until combined.
  6. Fold in optional add-ins if using.
  7. Pour batter into prepared loaf pan. Bake for 60 minutes or until a toothpick comes out clean.
  8. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
