Method
- Heat the oven to 400 F (200 C). Scrub and dry the potatoes, then coat their skins with the olive oil.
- Set them directly on the middle oven rack. Bake for about 1 hour, until a fork enters the centers easily.
- Lower the oven to 375 F (190 C). Let the potatoes cool for 10 to 15 minutes, until comfortable to handle.
- Cut each potato in half lengthwise. Scoop the flesh into a bowl, keeping the skins intact. Arrange the 8 shells on a baking sheet.
- Mash the potato flesh. Stir in the sour cream, Boursin, butter, 3/4 cup Cheddar, heavy cream, salt, and pepper.
- Divide the filling among the shells, mounding it gently. Bake for about 20 minutes, until hot throughout.
- After baking, add the remaining 3/4 cup Cheddar, crumbled bacon, and green onions or chives. Finish with parsley if desired. Serve warm.
Notes
These twice-baked potatoes are perfect as a side dish or even as a main course when served with a salad. Feel free to experiment with different types of cheese or add other favorite ingredients.
