Main Ingredients
  • 5 cups cooked, shredded rotisserie chicken Ensure chicken is thoroughly cooked before using.
  • 2 cups small broccoli florets Lightly steam and drain well.
  • 10.5 oz condensed cream of chicken soup Use undiluted.
  • 0.5 cup cottage cheese Adds creaminess to the casserole.
  • 0.5 cup sour cream For a tangy flavor.
  • 4 oz cream cheese Soften before mixing.
  • 1.5 tsp Creole seasoning Adjust to taste for spiciness.
  • 1 tsp garlic powder Divided use.
  • 0.5 tsp onion powder For added flavor depth.
  • 1 tbsp chopped parsley Fresh parsley preferred.
  • 1 cup shredded mozzarella Sprinkle over the filling.
  • 30 buttery round crackers Coarsely crushed for topping.
  • 4 tbsp unsalted butter Melt before use.
  • Optional sliced scallions For serving.
  • Butter or cooking spray To grease the baking dish.

Equipment

  • Shallow 9x13-inch glass baking dish

Method

  1. Heat oven to 350 F / 175 C. Lightly grease the dish. Steam broccoli until just tender; drain thoroughly and pat dry. The chicken must already be cooked.
  2. Blend the soup, cottage cheese, sour cream, softened cream cheese, Creole seasoning, onion powder and half the garlic powder into a creamy mixture.
  3. Fold in chicken, broccoli and parsley. Spread evenly in the dish. Scatter mozzarella over the filling.
  4. Toss coarse cracker crumbs with melted butter and remaining garlic powder. Distribute loosely over the cheese, keeping some larger crumbs for texture.
  5. Bake uncovered about 30-35 minutes, until the center is hot and the edges bubble. If the topping browns early, cover loosely with foil.
  6. Rest 5 minutes. Serve warm; add scallions if desired.

Notes

This casserole can be prepared a day ahead and baked just before serving. For a vegetarian version, replace the chicken with additional vegetables or a plant-based protein.
