Ingredients
  

For the Salmon
  • 4 fillets salmon fillets 6 oz each, skinless or with skin
  • 2 Tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • Salt & pepper to taste
For the Sauce
  • 2 Tbsp unsalted butter
  • 3-4 cloves garlic minced
  • 240 ml heavy cream
  • 80 ml chicken broth or vegetable broth
  • 50 g grated Parmesan cheese
  • 0.5 tsp chili flakes optional, for heat
  • 80 g sun-dried tomatoes chopped
  • 1 tsp dried basil or Italian seasoning
  • 80 g fresh spinach chopped
  • Salt & pepper to taste

Method
 

  1. Pat the salmon fillets dry. Season with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat olive oil in a large skillet over medium heat. Sear the salmon fillets for about 3-4 minutes per side until golden and cooked to your desired doneness. Remove and set aside.
  3. In the same skillet, melt the butter. Add minced garlic and sauté until fragrant (about 1 minute). Stir in the heavy cream, chicken broth, and Parmesan cheese. Mix well until the cheese is melted and the sauce thickens slightly.
  4. Stir in chili flakes (if using), sun-dried tomatoes, and dried basil. Simmer for 2-3 minutes.
  5. Add the fresh spinach and stir until wilted. Return the salmon fillets to the skillet, spoon the creamy sauce over the salmon, and let everything simmer for 2 minutes to combine the flavors.
  6. Garnish with fresh basil or parsley if desired. Serve warm with rice, mashed potatoes, or pasta for a perfect meal!
