  • 1 pound raw large shrimp, peeled and deveined Use fresh shrimp for best flavor
  • 2 tablespoons olive oil For sautéing

Method
 

  1. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
  2. Add shrimp, cherry tomatoes, spinach, Italian seasoning, paprika, red pepper flakes, salt, and pepper. Cook until shrimp are pink and spinach wilts.
  3. In a bowl, mix heavy cream, cream cheese, and Parmesan cheese until smooth. Pour over the shrimp mixture in the skillet.
  4. Top with shredded mozzarella cheese and transfer to a baking dish. Bake at 350°F (175°C) for 15 minutes or until cheese is bubbly.
  5. Garnish with fresh parsley before serving.

Notes

Serve with a side of cauliflower rice for a complete low-carb meal.
