  • 6 pieces thin-sliced chicken breasts
  • 1 bag fresh baby spinach small
  • 1 package sliced mushrooms large
  • 1 container green onion cream cheese
  • 8 oz shredded mozzarella cheese
  • 120 ml chicken broth about ½ cup
  • 60 ml olive oil ¼ cup
  • 1 dash pepper
  • 1 dash herb and garlic seasoning

Method
 

  1. Preheat the Oven: Set your oven to 375°F (190°C). Lightly grease a large baking dish with olive oil.
  2. Layer the Chicken: Arrange the thin-sliced chicken breasts evenly in the baking dish. Season them lightly with pepper and herb and garlic seasoning.
  3. Add the Cream Cheese: Spread a layer of green onion cream cheese over each piece of chicken, making sure every portion is well covered.
  4. Top with Veggies: Layer the sliced mushrooms over the cream cheese, followed by the fresh spinach.
  5. Add Liquids and Cheese: Drizzle olive oil evenly over the top, then pour in the chicken broth. Finish by sprinkling shredded mozzarella cheese generously across the entire dish.
  6. Bake: Place the dish in the oven and bake for 30–35 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  7. Rest and Serve: Let it sit for about 5 minutes before serving so the sauce can thicken slightly. Serve warm and enjoy the creamy, cheesy layers of chicken and veggies.

Notes

This dish can be paired with a side of cauliflower rice for a complete low-carb meal. Feel free to substitute the green onion cream cheese with regular cream cheese and some chopped scallions.
