Ingredients

Main Ingredients
  • 6 slices bacon chopped
  • 2 medium yellow onions chopped
  • 2 cloves garlic finely minced
  • 3 tbsp all-purpose flour
  • 1 tsp Kosher salt to taste
  • 1 tsp black pepper to taste
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 3 pounds russet potatoes washed and diced
  • 1 cup sour cream
  • 3 cups shredded Cheddar
  • 4 scallions scallions sliced

Equipment

  • Dutch Oven

Method

  1. Crisp bacon in a large Dutch oven, about 6–8 minutes. Reserve on a plate, leaving the drippings.
  2. Soften onions and minced garlic in those drippings, 4–5 minutes.
  3. Stir in flour, salt and pepper; cook 3 minutes.
  4. Gradually whisk in broth, then cream, smoothing out lumps.
  5. Add potatoes. Simmer over medium heat until easily pierced, starting checks around 10 minutes; larger pieces take longer.
  6. Partially mash, retaining chunks.
  7. Lower heat. Mix in sour cream, then Cheddar until melted. Avoid a rolling boil.
  8. Ladle into bowls; finish with reserved bacon and scallions.

Notes

For a lighter version, try using turkey bacon and reduced-fat sour cream. Serve with crusty bread for a complete meal.
