Ingredients

Main Ingredients
  • 4 slices bacon crispy and crumbled
  • 1360 g potatoes, peeled and chunked Yukon Gold or Russet are best
  • 113 g butter, in pieces unsalted for better control of seasoning
  • 473 ml sour cream can substitute with Greek yogurt
  • 227 g shredded Cheddar sharp Cheddar for a more pronounced flavor
  • 120 g chopped fresh chives, optional adds a fresh onion flavor
  • 1 tsp Salt and black pepper, to taste adjust salt and pepper according to preference

Equipment

  • Skillet
  • Potato Masher

Method

  1. Crisp bacon in a skillet over medium-high heat, turning, approximately 10 minutes. Drain and crumble.
  2. Cover potatoes with lightly salted water. Bring to a boil; simmer gently about 20 minutes until tender. Drain thoroughly.
  3. Mash potatoes with butter, then sour cream. Fold in bacon, Cheddar, and chives. Season and serve hot.

Notes

For a healthier version, try using turkey bacon and reduce the amount of cheese. These mashed potatoes pair well with roasted meats or can be enjoyed on their own.
