Ingredients
  

For the Chicken
  • 450 g boneless, skinless chicken breasts, cut into bite-sized pieces
  • 15 ml olive oil
  • 0.5 tsp onion powder
  • 0.25 tsp salt
  • 0.125 tsp black pepper
For the Creamy Lemon Sauce
  • 120 g mayonnaise
  • 1 clove garlic, minced
  • 0.25 tsp salt
  • 0.125 tsp black pepper

Method
 

  1. In a bowl, combine chicken with olive oil, onion powder, salt, and pepper. Marinate for at least 30 minutes, or up to 2 hours.
  2. Preheat grill to medium-high heat. Grill the chicken for 2-3 minutes per side, or until cooked through.
  3. In a small bowl, whisk together mayonnaise, lemon juice, garlic, dill, salt, and pepper.
  4. Divide the grilled chicken among bowls. Drizzle generously with the Creamy Lemon Sauce.

Notes

You can use any type of chicken you like for this recipe. For a spicier sauce, add a pinch of red pepper flakes to the Creamy Lemon Sauce. Serve the bowls with your favorite side dishes, such as rice, quinoa, or a green salad.
