  • 2 pieces chicken breasts cubed or sliced thin
  • 1 lb potato gnocchi store-bought or homemade
  • 2 cups baby spinach fresh
  • 1 cup cherry tomatoes halved
  • 3 cloves garlic minced
  • 1 piece lemon zest and juice
  • 1 cup chicken broth low sodium preferred
  • 0.5 cup heavy cream or coconut cream for dairy-free
  • 1 tbsp olive oil extra virgin
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1 handful fresh basil or parsley for garnish

Method
 

  1. In a large pot, bring water to a boil. Cook the gnocchi according to package instructions, then drain.
  2. In a skillet, heat olive oil over medium heat. Add chicken and cook until golden brown. Add garlic and cook until fragrant.
  3. Stir in chicken broth, lemon juice, and zest. Let it simmer for a few minutes.
  4. Add the cooked gnocchi, spinach, and cherry tomatoes. Stir in the cream and heat through.
  5. Season with salt and pepper. Serve garnished with fresh basil or parsley.

Notes

This dish pairs well with a crisp white wine. For a lighter version, use coconut cream instead of heavy cream.
