Ingredients
  

Lamb Chops
  • 8 pieces lamb chops small – about 1 inch thick
  • 2 tablespoons olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried rosemary or 1 tablespoon fresh, chopped
  • 0.5 tsp smoked paprika
  • 1 tablespoon unsalted butter
  • 2 cloves garlic smashed
  • 2 sprigs fresh rosemary and/or thyme (optional)

  • Cast Iron Skillet

Method
 

  1. Dab the lamb chops with a paper towel to dry.
  2. Season both sides with salt, pepper, garlic powder, dried rosemary, and smoked paprika.
  3. Heat a large cast-iron skillet over medium heat. Add the olive oil.
  4. Add the lamb chops in a single layer. Sear for 3-4 minutes per side until browned and cooked to desired doneness (130°F for medium rare, 140°F for medium).
  5. Add the butter, garlic, and fresh rosemary to the skillet in the final minute of cooking. Be sure to tilt the pan and spoon the melted butter over the chops.
  6. Remove the chops from the skillet and place them on a plate. Tent the chops with foil to retain the heat, but let them rest for 5 minutes before serving.

Notes

For best results, let the lamb chops rest for at least 5 minutes before serving to allow the juices to redistribute. Feel free to adjust the seasoning to your taste.
