Ingredients
  

Chicken Mixture
  • 2 cups cooked chicken, shredded Leftover chicken works great for this recipe; just make sure to warm it up thoroughly.
  • 120 ml honey BBQ sauce
Wrap Ingredients
  • 4 large flour tortillas
  • 1 cup romaine lettuce, chopped
  • 75 g cherry tomatoes, halved
  • 60 g shredded cheese (cheddar or pepper jack) You can customize these wraps by using different types of cheese.
  • 40 g red onion, thinly sliced
  • to taste salt and pepper
  • optional avocado slices for garnish

Method
 

  1. In a mixing bowl, combine the shredded chicken with the honey BBQ sauce. Mix until the chicken is evenly coated.
  2. Preheat your grill or grill pan over medium heat.
  3. Prepare the flour tortillas by laying them flat on a clean surface or plate.
  4. Once the grill is hot, place the chicken mixture on the grill and cook for about 5-7 minutes until heated through, stirring occasionally.
  5. Remove the grilled chicken from the heat and let it cool slightly.
  6. To assemble the wraps, lay the chopped romaine lettuce, cherry tomato halves, shredded cheese, and red onion onto each tortilla.
  7. Add an equal portion of the BBQ chicken mixture on top of the vegetables.
  8. If desired, add avocado slices for garnish.
  9. Roll the tortillas tightly, folding in the sides as you go, to secure the filling.
  10. Serve immediately on a platter, or wrap in foil for a portable option.

Notes

These wraps can be made ahead of time and stored in the fridge. Customize with your favorite vegetables or try a different sauce for variety.
