  • 4 pieces boneless, skinless chicken breasts Use fresh for best results
  • 1 tsp Salt and pepper to taste
  • 1 tbsp olive oil Extra virgin preferred
  • 2 cloves garlic, minced Fresh garlic adds more flavor
Cranberry Glaze
  • 1 cup fresh or frozen cranberries Fresh cranberries have a brighter flavor
  • 125 ml orange juice Freshly squeezed preferred
  • 60 ml honey or maple syrup Choose based on preferred sweetness
  • 0.5 tsp salt Adjust to taste
  • 1 tsp fresh rosemary, chopped Use ½ tsp dried if fresh is unavailable
  • 1 tsp grated orange zest Adds a citrusy aroma
  • 1 small clove garlic, minced Adds depth to the glaze

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, place the chicken breasts and season with salt, pepper, and olive oil.
  3. In a saucepan, combine cranberries, orange juice, honey or maple syrup, salt, rosemary, orange zest, and minced garlic. Cook over medium heat until cranberries burst and mixture thickens.
  4. Pour the cranberry glaze over the chicken and bake for 30 minutes or until the chicken is cooked through.
