Ingredients
  

Herb Chicken
  • 4 pieces chicken breasts boneless
  • 2 tsp herbs thyme, rosemary, mixed
Mashed Potatoes
  • 2 lbs potatoes peeled and cubed
  • 1/2 cup milk for creaminess
Glazed Carrots
  • 1 lbs carrots sliced
  • 2 tbsp brown sugar for glazing

Method
 

  1. Season the chicken breasts with herbs, salt, and pepper. Cook in a skillet over medium heat until cooked through.
  2. Boil the potatoes until tender. Drain and mash them with milk and butter.
  3. In another pot, cook the sliced carrots with brown sugar until tender and glazed.
  4. Serve the chicken with mashed potatoes and glazed carrots.

Notes

For extra flavor, consider adding garlic to the mashed potatoes or a splash of lemon juice to the chicken.
