  • 450 g boneless, skinless chicken breasts, thinly sliced
  • 120 ml pineapple chunks, drained
  • 60 ml teriyaki sauce
  • 60 ml honey
  • 60 ml soy sauce
  • 15 ml rice vinegar
  • 0.5 tsp red pepper flakes optional
  • 200 g cooked rice
  • 60 g chopped broccoli
  • 60 g chopped red bell pepper

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine the teriyaki sauce, honey, soy sauce, rice vinegar, and red pepper flakes (if using). Add the chicken and marinate for at least 15 minutes.
  3. Place the marinated chicken, pineapple chunks, rice, broccoli, and red bell pepper on a large baking sheet.
  4. Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  5. Serve immediately and enjoy!
