Ingredients

Main Ingredients
  • 6 g small potatoes peeled and diced into 1/2-inch cubes
  • 7 tbsp butter divided: 3 for the ham/onion and 4 for the sauce
  • 303 g cooked ham diced into 1/2-inch cubes
  • 1 g small onion finely chopped
  • 3 tbsp all-purpose flour for the sauce
  • 355 ml milk for the sauce
  • 1 tsp Salt and black pepper to taste
  • 227 g shredded Cheddar for the sauce
  • 1/4 cup bread crumbs for topping

Equipment

  • 1 1/2-quart baking dish

Method

  1. Cover potatoes with salted water. Bring to a boil, then simmer gently for 10-15 minutes, until tender. Drain.
  2. Set the oven to 350 F (175 C). Lightly grease the baking dish.
  3. Warm 3 tablespoons butter in a skillet. Cook the ham and onion in it for about 5 minutes, stirring until the onion softens. Take off the heat.
  4. Combine the drained potatoes with the ham mixture; put into the baking dish.
  5. Melt the other 4 tablespoons butter in a saucepan. Stir in flour and cook, stirring, for about 5 minutes, until lightly golden.
  6. Whisk in milk gradually. Season; stir over heat until thick, about 2 minutes. Lower the heat and melt in all the Cheddar.
  7. Pour sauce over the ham and potatoes. Scatter bread crumbs on top.
  8. Bake uncovered for 25-30 minutes, until bubbling and browned.

Notes

This casserole is great for using up leftover ham and pairs well with a fresh green salad.
